Description: Farmed organically at the GIlGraves vineyard in Axedale, Central Victoria, grown in decomposed granitic sands and planted between 2012-2015.
This is a full vineyard, true field blend style having been picked in March 2021, balancing ripeness across the four varieties in the mix, but leaning on Shiraz as a guide. Shiraz, Malbec, Sangiovese and a whisker of Viognier. !00% de stemmed and fermented wild in an open vat over 3 weeks. Pressed to hogs heads and aged on fine lees for 10 months. Bottled with minimal sulphur in February 2022 with no filtering.
Red/blue fruits. Ripe and rounded with bright aromatic lift. Dried raspberry and blood plum. Soft spice, anise and cinnamon. Gentle tannins that fill the mouth.
